In NC, a sanitation rating is a mandatory public health grade issued to the foodservice and lodging establishment based on routine sanitation inspections by the Environmental Health Staff. 

Scoring and Grade Scale
Establishments begin each unannounced inspection with a base score of 100 points. Points are deducted for violations of the North Carolina Food Code, which is based on FDA Food Code standards.

Key Factors Evaluated 
Inspections primarily focus on "Risk Factors" most likely to cause foodborne illness:

  • Employee Hygiene: Proper handwashing and use of gloves.
  • Temperature Control: Ensuring food is kept at safe hot and cold holding temperatures.
  • Food Sourcing: Using food from approved, safe sources.
  • Contamination Prevention: Cleaning equipment and preventing cross-contamination.
  • Adequate Cooking: Reaching safe internal temperatures for meats and other foods
Posting Requirements

By law, establishments must display their current grade card in a location readily visible to the public, such as near the entrance or ordering area.
